What is Bacanora?

Bacanora is the hidden gem of Mexico’s agave spirits — crafted exclusively in the mountains of Sonora from Agave Pacifica, a varietal that thrives in the desert’s extremes. For 77 years Bacanora was outlawed, made only in secret and passed down through families. Today, it holds a protected denomination of origin, much like tequila or mezcal, and is finally being celebrated beyond Sonora.

The process is traditional and rooted in the land: agave hearts are slow-roasted (either in underground mesquite wood ovens or modern steam ovens), crushed, and fermented naturally before being distilled into a spirit that lands between tequila and mezcal — sweeter than tequila, less smoky than mezcal, with its own distinctive Sonoran character.
